Forty years ago in a small pastry shop located in Strasbourg, France, an employee came to adore the taste of a small, delicious tartlet by the name of “Amandine.” This employee became a bakery owner himself, naming his Calgary business Amandine Bakery & Pastry. Butterblock was born from founder Karen Kong’s passion for baking without limits. After honing her skills in Calgary’s busiest kitchens and graduating from SAIT’s Baking and Pastry Arts program, Karen set out to create something of her own free from preset recipes and restrictions. Today, Butterblock is known for its 81-layer croissants, cookies, and laminated doughs that reflect both discipline and creativity. Every bite carries Karen’s dedication, resilience, and love for the craft of baking.

Canela started in Veronica's daughter's kitchen as a simple recipe of vegan cinnamon rolls. It later turned into a farmer's market business where everything was baked in a home oven with a small rolling pin. Eventually, Canela grew and became a staple for the YYC vegan community. We are so happy to share our success and pastries with our lively and lovely clientele.

Chef Yann Blanchard got his passion for all things pastry while working in his parents’ bakery [France] starting at a young age. After successfully studying in Paris before gaining international experience, he finally settled in Calgary. Although he enjoyed being an executive chef for a club or for the Fairmont Palliser, he dreamt of more creative freedom.

My name is Lisa Graham and I mind your beeswax. During my studies, I volunteered to make rolled beeswax candles. I loved it so much, I found a beeswax sheet supplier so I could make more. The result was way too many candles to burn in a reasonable amount of time. When I started selling the candles on Kijiji, I found many people had a hard time finding beeswax sheets.
